A bowl of hot soup in this wintery season is a must! Soup is easy to make and can be taken as either a main course or a starter. Soup is also good for health and can be made by various types of vegetables, meat or even pasta. Mushroom Soup
Introduced in 1934, Mushroom Soup is delicious and has a thick consistency best for winter. Mushroom soup is quite popular in restaurants.
All you need to have is:
- 2 Onions
- 90g of butter
- 1 Garlic- Crushed
- 500 g of Mushroom
- 1 lt of Chicken Stock
- 1 Bay leaf
- 4 tablespoons of Single Cream
- 2 tablespoons of plain flour
- Parsley- For serving
The method:
Melt the butter in a saucepan and fry the onions and garlic for 8-10 mins until soft. Add in the mushroom and cook for 3 mins until the mushroom is soft. Add in the flour and mix. Pour the chicken stock and the bay leaf. Bring to boil for 10 mins. Remove the bay leaf and the mushroom mixture from heat. Blend the mushroom and drop it back to the soup. Reheat the soup and add in the cream. Stir gently. It’s good to be served, don’t forget to add it to the parsley on top!
Lentil Soup
Lentil soup is best served with bread. It is traditionally consumed in winter. Lentils might include veggies or meat.
Ingredients:
- 150g Red lentils
- 5-6 Carrots- Chopped
- 2 lt of either chicken, beef stock or vegetable stock
- 2 Medium Leeks – Sliced
- Parsley – Chopped
Boil the stock in a large pan and add in the lentils till it softens. Add in the leeks and chopped carrots to season. Bring the lentils to boil then reduce the heat, simmer for around 50-60 minutes. The lentils need to be crushed. Add in the parsley! This dish is best served with bread.
Tomato Soup pasta
For all pasta lovers, you can have this dish when you are sick! This will satisfy your wants for pasta! All you need to have is:
- Half an onion
- 2 tablespoon of Olive oil
- 1 small carrot- Finely Sliced
- 100ml passata sauce
- 400g peeled tomatoes
- Chicken or vegetable stock
- 1 Celery- Finely chopped
- 2 Tablespoon of cream
- 100g soup pasta- Cooked in al dente style
- Shaved parmesan
- Chopped basil to serve
Take a saucepan and heat the oil over low heat. Add in the carrot, onion, celery and fry all for about 10 mins. Add in the Passata sauce and all the tomatoes. Bring to boil. Pour in the stock with a pinch of sugar and season. Simmer for about 18-20 mins. Add more water if need to and taste the soup if the seasoning is just. Add in the cream (optional) and the cooked pasta. Serve with cheese on top of basil leaves. It’s is best served with bread.
